Coconut Cookie Dough Balls

INGREDIENTS: 

  • 2 cups chopped pecans
  • 2 cups raw, flaked coconut
  • 1/4 cup coconut oil
  • 1 dropperful of stevia
  • ¼ cup of Lucuma powder
  • 1 tsp. vanilla
  • pinch of salt
  • 1 cup Cacao nibs

Firstly blend the nuts into tiny pieces, then add the rest to the blender and pulse (or you can mix really well by hand in a big bowl).

Make sure everything is evenly coated.

Roll mixture into balls.

You can freeze for 10 mins or eat straight away, depending on how firm you prefer your balls.
